Serves 4

Ingrediants:

1 Kg pumpkin
3 Tblspoon butter
1 Tblspoon honey
1 orange - juice and shredded rind
1 tblspoon ground ginger

Preparation:

  • Cut Pumpkin into slices about 1cm thick.
  • Melt butter and add honey,ginger and orange juice
  • Dip pieces of pumpkin in butter mixture and arrange in a greased dish.
  • Pour remaining juice on top and cook in a hot oven-45 minutes.
  • Baste occasionally with juice.
  • Cook shredded orange rind in a little water until tender.
  • Drain and rinse and use as a garnish on the pumpkin.

There we have a yummy vegetable dish which I enjoy a lot to go with a main meal.
